Hillsboro Resort is proud to announce the opening of its highly anticipated signature restaurant, King. Exclusive to resort guests, Roí is one of the only oceanfront restaurants in the area, offering stunning views of the hotel’s private beach along the iconic Hillsboro Mile. From the Greek word for “flow,” Roí (pronounced Ro-y) boasts a chic and vibrant tropical design that creates a harmonious ambiance with its scenic South Florida surroundings.

At the helm of the Roí is Executive Chef Jason Antolak, who brings more than 15 years of experience in the culinary arts to the development of the restaurant’s globally inspired dishes made with locally sourced ingredients. Prior to joining the Hillsboro Beach Resort team, he actively shared his passion for culinary creativity with several of Fort Lauderdale’s premier restaurants. Chef Antolak has participated in major culinary events such as the South Beach Wine & Food Festival and has worked alongside some of the region’s most renowned chefs, including celebrity chef Dean James Max and Excellent chef winner Jeremy Ford.

A chic, upscale dining spot for any time of day, Roí features corded Muse chairs in a soothing shade of dark gray and galvanized iron Oggetti Schema Moire pendant lights hanging above each table. The restaurant’s walls are wrapped in a household wallpaper of extinct animals by Marcel Wanders. Custom dark bronze metal divider screens throughout the restaurant coordinate with those featured in the resort lobby, creating a cohesive yet dynamic environment.

As the only restaurant on Hillsboro Mile, Roí exclusively allows resort guests to experience internationally inspired cuisine and handcrafted cocktails in an intimate setting both indoors and on the patio with stunning views of the serene Atlantic ocean. Serving breakfast, lunch and dinner, Roí uses local and seasonal ingredients in its menus.

The breakfast plates include the Omelette Mushrooms Chives Truffle ($24) with cremini and parmesan mushrooms and French toast drizzled ($18), a delicious stack of Texas toast topped with Irish cream mousse and juicy seasonal berries. The lunch menu features South Florida-inspired specialties such as Chicken Quesadilla Bites ($13) filled with smoked chicken, pico de gallo, guacamole and crema, and Beach house tacos ($20) consisting of the catch of the day, grilled pineapple chimichurri and yuzu salad. Dinner entrees include a range of surf and turf specialties like White clams ($20) with Florida orange slices dipped in crème fraiche and Funky Buddha beer broth topped with chives; Cut of beef ($68) on a bed of potatoes with duck fat and roasted cipollini onions, garnished with chimichurri; and St. Jacques shells ($36) atop vodka beet and corn mashes, sandwiched between crispy glass chips and topped with gremolata.
